50% Gewürztraminer, 38.6% Riesling and 11.4% Pinot Gris.

Whole clusters were transferred to unlined clay amphora and sealed to provoke carbonic maceration.
Fermented using non-selected, wild, yeast.
Full malolactic fermentation.
Matured 3 months in the clay vessels.
Bottled without fining or filtration.
Vegan friendly and bone dry.

ABV: 9.2%
Residual Sugar: <2.0 g/L
TA: 5.65 g/L
pH: 3.63

10 Golden Corks have been placed at random again in the 2021 Pure Imagination batch. Each Golden Cork is an invite to a soon to be hosted private dinner at Rosewood. Watch out for these when opening each bottle. Please note, the corks are not golden in colour or solid gold (maybe one day). Golden Corks have been branded with "GOLDEN CORK" on the side wall of each.
