2017 VSOP


Introducing VSOP (Very Special Old Pyment). VSOP traditionally is an aging declaration for French Cognac. We have adapted this term for this specific mead – for us it means Very Special Old Pyment. A pyment by definition is a mead made of fermented grape juice and honey together, we thought this was fitting for a mead fermented with both chardonnay juice and honey inside 500L decommissioned Cognac barrels. After fermentation, this semi-sweet mead was fortified with a neutral grain spirit to bring the total alcohol to 19%. VSOP was aged for two years before bottling without any sulphur additions, fining or filtrations. This is a complex and full-bodied mead that’s well suited to be enjoyed slightly chilled after dinner or with your favourite fall themed dessert.

Bottled without fining or filtration.

Aged 2 years years in 500L ex-cognac barrels. 

No sulphur added. Bottled unfined and unfiltered.
