AF for Arrested Fermentation. Referencing the production method used for this wine, we arrested (stopped) the alcoholic fermentation which yields a small amount of residual sugar to balance the palate. Inspired by the classic Riesling regions of the world, the Mosel, we recreated their classic labels of yesteryears but with our own Niagara twist. Racing acidity is counter balanced by a kiss of sweetness resulting in a fleshy and juicy, refreshing, palate. Drinking well now, can cellar for up to 10 years.
